Spicy sour thai noodles

Ingredients:

  • 200g rice noodles
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 red chili, finely chopped
  • 200g shrimp, peeled and deveined
  • 1 bell pepper, thinly sliced
  • 1 carrot, julienned
  • 1 cup bean sprouts
  • 3 tablespoons soy sauce
  • 2 tablespoons fish sauce
  • 2 tablespoons tamarind paste
  • 1 tablespoon sugar
  • 1 lime, juiced
  • Fresh cilantro and chopped peanuts for garnish

Instructions:

  1. Prepare Rice Noodles:
    • Cook rice noodles according to package instructions. Drain and set aside.
  2. Prepare Sauce:
    • In a small bowl, mix together soy sauce, fish sauce, tamarind paste, sugar, and lime juice. Set aside.
  3. Cook Vegetables and Shrimp:
    • In a large pan or wok, heat vegetable oil over medium heat. Add minced garlic and chopped red chili, sauté for 1-2 minutes until fragrant.
    • Add shrimp to the pan and cook until they turn pink.
    • Add sliced bell pepper, julienned carrots, and bean sprouts. Cook for an additional 2-3 minutes until vegetables are slightly tender.
  4. Combine Noodles and Sauce:
    • Add the cooked rice noodles to the pan with the vegetables and shrimp.
    • Pour the prepared sauce over the noodles and toss everything together until well combined.
  5. Serve:
    • Once everything is heated through, remove from heat.
    • Serve the Spicy Sour Thai Noodles garnished with fresh cilantro and chopped peanuts.
