Ingredients:

  • 2 cups of rice
  • 1 onion, chopped
  • 2 cloves of garlic, minced

  • 1 pound of chicken or beef, diced (optional)
  • 2 tablespoons of curry powder
  • 1 teaspoon of turmeric powder
  • 1 teaspoon of cumin powder
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • 2 cups of chicken or vegetable broth
  • 1 cup of coconut milk
  • 1 carrot, diced
  • 1 potato, diced

Instructions:

  1. Rinse the rice thoroughly under cold water until the water runs clear. Drain and set aside.
  2. In a large pot or skillet, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant and translucent.
  3. If using, add the diced chicken or beef to the pot and cook until browned on all sides.
