Ingredients:
- 2 cups of rice
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 tablespoon of vegetable oil
- 1 pound of chicken or beef, diced (optional)
- 2 tablespoons of curry powder
- 1 teaspoon of turmeric powder
- 1 teaspoon of cumin powder
- 1 teaspoon of paprika
- Salt and pepper to taste
- 2 cups of chicken or vegetable broth
- 1 cup of coconut milk
- 1 carrot, diced
- 1 potato, diced
Instructions:
- Rinse the rice thoroughly under cold water until the water runs clear. Drain and set aside.
- In a large pot or skillet, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant and translucent.
