Ingredients:
- 1 cup water
- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 4 large eggs
- 8 oz cream cheese, softened
- 1 cup heavy cream

Instructions:
- Prepare the Pastry Dough:
- In a medium saucepan, bring water and butter to a boil over medium heat.
- Stir in flour until the mixture forms a ball. Remove from heat and let it cool for 5 minutes.
- Add eggs one at a time, beating well after each addition until smooth.
- Bake the Puffs:
- Preheat the oven to 375°F (190°C).
- Drop rounded tablespoons of dough onto a baking sheet, leaving space between each.

- In a separate bowl, whip the heavy cream until stiff peaks form.
- Fold the whipped cream into the cream cheese, add powdered sugar and vanilla extract. Mix until well combined.

- Once the pastry puffs are cooled, cut them in half horizontally.
- Spoon or pipe the cream cheese filling onto the bottom half of each puff.
- Place the top half back on to create a sandwich.
- Serve:
- Dust with powdered sugar if desired.
- Refrigerate for at least an hour before serving to allow the filling to set.
